Mini Breads




On Monday, K and I were invited to a friend's house for the afternoon. When I made the Edamame Cheese Bread a while back, my friend had mentioned that she wanted to try it one day. So, I figured this would be the perfect time to make it.

I got the dough ingredients into the bread maker and it was nearly finished when I started cooking the edamame. I quickly realized that I didn't have anywhere near enough edamame for the bread - just over half. Yikes!!

I ran around the kitchen like a chicken with my head cut off trying to figure out what to do with the other half of the dough. Chocolate to the rescue!!

I realized that I had some plain chocolate bars tucked away. (It seems I always have extra chocolate laying about.) I decided that with only half of the dough, little mini breads could be quite cute. They totally were.




I did the edamame bread just like the big version - rolled it out, spread some sliced cheese and edamame, rolled it up and sliced it. For the chocolate breads I took off a little chunk of dough, spread it out in my hand, put a few pieces of chocolate inside and then wrapped it up and placed it seam down in a muffin tin.

The chocolate ones were delicious straight out of the oven with the chocolate all melty, but weren't as delicious afterwards once the chocolate hardened. Definitely not bad, however, given the last minute situation of it all.

  1. The fact that you have chocolate just lying around the house (as in you haven't devoured it at the end of a stressful day) makes me admire you all the more!

  2. Honey, if I devoured chocolate at the end of stressful days, I think I would have gained about 100 pounds over the past two years.

    I had a bar or two leftover from the cake balls. So trust me, it hadn't just been sitting around for ages or anything.
